A grand masterpiece of eloquent design, with a sincere purpose and welcoming amazing energy providing peace of mind.

This is how the newly opened Koko-Nui café can be described.

Located as part of the Nadi International Airport’s departure lounge, Koko-Nui provide you with expected top notch service.

Koko Nui was launched earlier this month, with its sophisticated and inspiring café, taking the standard of airport restaurants to a higher level offering departing passengers and their family and friends a place to relax.

Their menu offers a wide variety of food options, created with fresh ingredients, along with an appealing wine and drinks menu.

The cafe is independently owned by Layla Sarraf, who is joint owner of Lulu Bar and Restaurant based at the Port Denarau Marina complex.

Koko Nui cafe employs 42 staff members with roles from service staff, to baristas, chefs, kitchen staff, purchasing officers, cleaning and various others.

Café concept

Ms Sarraf said opening her café at the Nadi International Airport was inspired by wanting to provide a café where people could experience the continuity of the warm Fijian hospitality right up until they depart the country.

By creating a high standard of personalised service, and a sense of being welcomed home, it would complement the experience visitors’ have during their stay in Fiji.

Ms Sarraf stated, “Koko Nui has a created an amazing sense of energy and revitalisation that is beyond comparison. When customers come with friends and relatives I want them to experience relief and ease in a location where they can feel comfortable to reminisce about their day, relax, sip on a coffee and have delicious fresh food prepared on site by our chefs.

“This is a project that I launched independently and I am really passionate about giving both locals and visitors a taste of paradise before they depart Fiji.

“The investment was substantial and there were no short cuts made in delivering the eatery. I feel truly happy to be part of the rebuild and new upgrade of the Nadi International Airport. I wouldn’t choose to be anywhere else, but Fiji,” she said.

Café layout and uniforms

Café shop design and layout is crucial to customer experience and it is imperative to consider this when planning café design.

Ensuring that each customer has a memorable and enjoyable interaction which would entice them to return, is exactly what Ms Sarraf thought of in the initial design phase for the café.

“The first thing that customers see is the welcoming smiling faces and eye-catching uniforms inspired by a blending of modern and traditional Fijian design. The presentation of the staff combined with their friendly smiles embodies the spirit of Koko Nui and that represents Fiji for me.”

Café fitout

A unique aspect of the visual appeal of Koko Nui Café is its lighting features.

The hanging light fittings are pineapple inspired, which is one of Ms Sarraf’s personal favourite themes.

“I choose to have pineapple theme focus as they are one of my favourite fruits and it also creates the feel of the warmth from the tropics. The ambience of the café is also emphasised through the uniqueness of exposed element light fittings.”

Ms Sarraf sourced the majority of the café fittings and furniture from local suppliers.

She recollected: “It was an amazing experience working with the contractors to complete the project build. I feel it was a great accomplishment for the team and work they can be proud of the finished outcome.”
