The bountiful supply of fresh fish caught by rural fishers around the country has prompted the continued success of Sautu Restaurant.

Sautu Restaurant is an extension of the Fiji Agromarketing’s Nausori division.

Fiji Agromarketing acting chief executive officer Setareki Tale was instrumental in establishing the restaurant at the end of Nausori Town in Fiji’s Agromarketing property.

The restaurant was opened in 2017 on the back of demand from rural fishers for an outlet to sell their catch.

Mr Talke said: “We buy 150 kilograms of fish daily.

“We pay $15,000 a week.

“We are mandated to serve communities that do not have access to markets, even in urban centres.

“We buy fish from all over Fiji,” he said.

Mr Tale said local fishers wanted an outlet for the supply of daily catch.

“There was no avenue to fully utilise the daily catch.
It was a management decision to set up the restaurant,” he said.

When there is a surplus in Fiji, Agromarketing opens its doors for the public market, Mr Tale said.

“We pay around 200 fishermen around the country weekly.

“The restaurant has helped us grow our local fish market which the community gains from.”

Sautu Restaurant opens Monday to Saturday from 8 am to 5 pm.

It is run by a team of workers, including a professional chef, Mr Tale said.

In a day, an average of 300 people grace the restaurant.
