A taste of Talica’s pork curry

But I was determined to give Talica Temo’s curry pork giblets and cassava a try when I caught up with her at the Government Shipping canteen in Walu Bay two weeks ago.
The 53-year-old Komo villager from Kabara in Lau, has been cooking a storm at the canteen for the last 12 months.
“I have been cooking here for just more than a year now and I enjoy it,” Mrs Temo said.
Mrs Temo, who has five grown up children, said she loves cooking and since all her children are married and earning a living for themselves, she wanted to do something on her own.
“I love cooking and I decided to come here and cook so that I keep myself occupied by doing something that I love and I am also getting something out of it,” she said.
Mrs Temo, who earns about $80 a day from the proceeds of her mouth watering pork dish, said even though it may not be much it is still something.
“Something is better than nothing,” she said.
The Newtown resident said she learnt to cook from a very young age when she grew up in the village.
Her mouth watering pork dish does not last long in the canteen as hungry workers flock to fill their stomachs.
Here is her recipe but keep in mind Talica cooks for many.

Ingredients:
l Pork giblets (according to number of people eating)
l Soya Bean Oil (2 tea spoon)
l Garlic (1/2 clove)
l Ginger (1 tea spoon)
l One onion chopped
l 1 cup water
l Salt (2 pinch or according to taste)
l Curry Powder (1 table spoon)
l Haldi Powder (1/2 table spoon)
l Chilli Powder (2 pinch or according to taste)
l Cassava / Rice.

Method:
l Dice pork giblets.
l Heat oil in the pot.
l Add pounded garlic and ginger in the pot.
l Add onions.
l Fry until brown.
l Add curry powder, haldi powder, and chilli powder and stir.
l Add water into pot and let it simmer for 5 minutes.
l Add pork giblets into pot and stir thoroughly until curry mixture blends in with the meat.
l Let it simmer until pork is cooked.
l Serve with boil cassava or rice.
