Fijian spinach & avocado, sweet potato puree with papaya, coconut & coriander relish
Ingredients:
-Fijian spinach-150grms
-Onion chopped-40grms
-Tomatoe-30grms
-Avocado-30grms
-Oil-5ml
-Snapper-180grms
-Lemon juice
-Seasoning to taste

Method:
-Marinate snapper in oil, lime juice and seasoning cook at temperature of 180*c for 12 mints.
-In a pan saute onion, avocado and Fijian spinach, tomato.

Sweet potato puree
Ingredients:
-Kumala cooked and grated-100grms
-Onion chopped-40grms
-Butter-20grms
-Whipping cream-50ml
-Seasoning to taste
Method:
-Add butter and saute onion.
-Add kumala grated, add whipping cream.
-Blend until smooth in texture

Papaya, coconut and coriander relish
Ingredients:
-Cut julienne papaya, shredded fresh coconut and coriander sprinks
-Combine the above season and serve
