Tourists and locals alike can taste new menus being launched at Lulu’s Bar, Restaurant and Café at Port Denarau. The eatery is known for its innovative mouth-watering sushi and sashimi – a delicacy loved by Asian folks, especially the Japanese. It boasts the talents of its chefs whose menus can inspire all ages. Lulu’s opens 9am to 10pm daily.

Chef: Sushi chef Emosi Lum

Restaurant: Lulu’s Bar, Restaurant and Café located at the Port Denarau Retail and Commercial Centre, Denarau Island.

Meals: Lulu’s heart-shaped house roll and butterfly roll

Experience and background: Originally from Ba. Mr Lum was the first from his family to be a chef but is blessed with Asian bloodlines and is well-known for culinary skills and depth.

He has been a sushi chef for the last 14 years. He spent 12 years at Hamacho Restaurant at the Westin Denarau Island Resort and Spa which was damaged during Cyclone Evan a few years ago. The other two years he spent as a Sous chef at Paradise Cove Resort in the Yasawa group.

 

Heart-shaped house roll

Ingredients:

  • Cucumber slice – 159 grams,
  • Cream cheese -159g,
  • Tampura prawns – two pieces,
  • Sweet mayonnaise – one pinch,
  • Salmon slices – 490g,
  • Nori sheet – one whole,
  • Wasabi – 5g, ginger – 5g

 

Method:

  • Spread sushi rice on Nori sheet and turn upside down
  • Place ingredients, cucumber, cream cheese, tampuna prawn and mayonnaise and roll in tightly
  • Then place slices of salmon on top of the roll and press it in a heart shape
  • Cut into eight to ten pieces
  • Finally serve it with soy sauce, ginger and wasabi.

 

Butterfly roll

Ingredients:

  • Lettuce 10g,
  • Pawpaw 10g,
  • Salmon 15g,
  • Tuna 15g,
  • Sushi Rice 200g.

 

Method:

  • Spread sushi rice on Nori sheet
  • Turn over the rice
  • Put in the filings, Lettuce, pawpaw, salmon,
  • Then roll Nori sheet over outside of the rice spread
  • Add tuna on top, cut into ten pieces serve with Soy Mayo
