Fresh local seafood. Indian spices. Fijian flavour. Regular menu charges. These are all part of the mix which have made the Jack’s of Fiji Bonefish Restaurant on Denarau so successful.

Jack’s of Fiji chain of restaurant chief executive Eugene Gomes made these comments as Bonefish Restaurant marked its fifth anniversary on Sunday evening.

“At Jack’s we have this culture, whatever you do today should be better than yesterday and keeping our guests in mind,” he said.

Mr Gomes said when they started the first seafood restaurant on Denarau Island, the opening of Bonefish had something unique.

“That is why we use as much local fresh seafood, fresh recipes which are more of a fusion recipes; not continental and not European,” he said.

“But with a touch of Fiji with a touch of Indian spices and a Fijian flavour.”

He reiterated the success actually comes from the fresh seafood they use.

“We don’t use salmon in our menu because tourists can eat that at their home. That’s why we serve fish that is out of the deep sea and that is known as fresh,” Mr Gomes said.

“Implementing menu with a thrill in it, where people see the menu and eat them and really find the difference.

“In all our restaurants, it has been a challenge that every, menu we make is always better than the previous one.”

Mr Gomes said they are always on their toes because on a daily basis, they see tourists who were there two months or three months back.

And that’s why all their restaurants are always changing their menu.

Staff members all came in their attires to suit the pirate theme for the event.

This Sunday, Jack’s Indigo Asian Restaurant, will celebrate its fifth anniversary.
