Renowned international celebrity chef Carlos Carlito Cham says he is happy to tap into the rich culinary flavours of Fiji.

Chef Carlos is the owner and chef at Carlito’s Place in Pescadero, Baja California Sur, Mexico, which is famous for his world-class fusion cuisine.

Currently he is being hosted by Turtle Island Fiji for its ‘Savour the Flavour’ event and will return to California next Tuesday.

The purpose of the tour is to help our local Fijian chefs interact with other international participants in cooking classes and demos and of course indulge in their South Pacific-inspired dishes.

Mr Cham toured the Nadi and Lautoka markets and the fish wharf on Tuesday. He said he admired local Fijian cuisines and how the flavours of each meal were preserved.

“One of the things I admired is how the flavours were respected, it was very surprising to have some other food such as coconut milk, and deep fried taro leaves (rourou balls),” he said.

“It’s very different from Mexican foods because in Mexico we’re all about intensifying flavours; first of all we love to eat spicy just like Indian food because we make something strong in flavour and eat a lot of carbohydrates with it.”

He said the great satisfaction in being a chef also had its advantages in terms of being able to blend flavours and make new dishes.

Monica Laurence, who is the niece of Richard Evanson, owner of Turtle Island, said  Chef Carlos would be joining three other international chefs.

“We decided to bring in a different chef every week to really share their passion and their creations with us on Turtle Island so Carlos is our first chef.”

New York chef Sam Talbot, author, philanthropist and TV personality based in Brooklyn, will start his tour from November 18 to 24.
