Acclaimed Chef and Restaurateur Mario Alfieri at the Warwick Fiji’s Pappagalo Italian Restaurant training the team.

The Warwick Fiji is this week delighted to have acclaimed Chef and Restaurateur Mario Alfieri visiting the resort to share his knowledge and skills with its team of chefs at “Pappagalo” Italian restaurant.

Chef Alfieri is undertaking a daily training programme with the resort’s local chefs throughout the week.

The Warwick Fiji general manager, Brad Downton, said: “We are very excited to have Chef Alfieri here to provide training for the chefs.

Chef Alfieri’s previous restaurant “The Dining Room” won a string of awards including Best Italian Restaurant in Brisbane for three consecutive years and Best Italian Restaurant in Queensland.

Chef Alfieri describes his food as Classic Italian style with a modern touch.

He said: “Food is like fashion – people get tired of it – it changes but you always go back to the basics.

“I teach chefs to find something new every day because something new is there.”

He likens this search for innovation in food with art and uses famous painters such as Picasso and Dali as examples.

Chef Alfieri last visited Fiji in the early 1980’s. He is impressed with how Fiji has developed and that almost all produce and ingredients are now available here.

His menu which features his signature dishes such as “Fettucini with Crab and Prawns” starts this week at Pappagalo which is one of the five restaurants at The Warwick Fiji.

He will personally be in the Pappagalo kitchen sharing his techniques and wealth of knowledge until this Saturday.
