Four Fijian representatives will be flying the Fijian flag at the New Zealand National Chef Salon in Auckland from July 28 to 31.

Fiji Chefs Association president Davendra Reddy said Fiji will be competing against the other Pacific countries in the Gourmet Pacific challenge.

He said the Fijian culinary industry is unique compared to the rest of the world.

“There are three pillars that differentiate and sets us unique which are culture, art and heritage,” Mr Reddy said.

“Culture: from the multi-diverse communities in Fiji it rightfully depicts on who we are and how our flavours are influenced by our ethos.”

“Art: With our flavours of food comes our art of its preparations, gentle, delicate, care and respect are our primary ethics for our food preparation, our versatile traditional method of food preparations and slow earthen oven baking techniques sets us miles apart from the rest of the world and is considered as one of the most nutritious and healthiest of cuisines.

“Lastly is Heritage: In the Pacific, food is our prime focus of everyday life and is considered most scared in our traditional philosophies, whether it be any form of gathering/celebrations food brings us closer in harmony and makes us be united when compared to any other place in the world,” he said.

Mr Reddy thanked the main sponsored Pacific OZ Tralasia and co-sponsor Goodman Fielder (Crest chicken).
