It’s Diwali and 48-year-old Rajesh Chand of Nausori participated in the 2016 Fiji Sun Diwali Recipe Competition.

For the carrier driver his family will not be celebrating Diwali this year.

Last year on Diwali Day, his father was at the Wanibokasi mortuary and two months later one of his cousins passed away.

“It’s very sad for the family but we will be remembering our after and cousin this Diwali,” he said.

The Diwali fever is with Mr Chand and that is why he submitted his recipe to the Fiji Sun competition.

When told that he did not win, he said he entered the competition because he wanted mothers to use his recipe for this Diwali.

“Suji marshmallow is my favourite, so cook it and try it out,” he said.

Wikipedia says that a marshmallow is a sugar-based confection that, in its modern form, typically consists of sugar, water and gelatin whipped to a spongy consistency, molded into small cylindrical pieces, and coated with corn starch. Some marshmallow recipes call for eggs. This confection is the modern version of a medicinal confection made from Althaea officinalis, the marshmallow plant.



1 cup suji

2 teaspoons Rewa butter

3 cups Rewa Life

1 cup sugar

Colour pink

1 teaspoon Rewa Powdered Milk

1 cup desecrated coconut



Mix suji and Rewa Powdered milk in a bowl

In another bowl mix sugar colour in Rewa Life

In a deep pan roast suji on low flame for three minutes

Add milk mixture to the suji and cook it till it’s soft and start leaving the pan.

Take a greased tray with butter and spread the mixture.

Sprinkle the desecrated coconut on
