Chef Lee’s Cuisine @ Victoria’s Apple

Victoria’s Apple restaurant, it is now a popular dine out spot in Downtown Nadi.
It is the first Singapore cuisine fine dining set up in the Jet Set town.
The dishes originate from Singapore; where the restaurant’s Chinese chefs have created menus that are famous in Taiwan, Hong Kong, Singapore and China as well.
One of its recipes is similar to that of traditional western steak – highly nutritious, the sauced meat has a high appetising smell, awesomely sweet taste with mild spices that make the steak temptingly delicious, through a simple way of cooking.
They also specialise in Fijian, Singaporian and Cantonese style dishes. They are open daily from 11am to 10pm.
Braised Sort Ribs in Special Singapore Style:
INGREDIENTS:
Ginger 6grams,
Chill 3g,
Anise [aniseed] 0.5g,
Braised Sort Ribs 0.5kg,
Green onion 3g,
Cinnamon 0.5g,
Bay leaves 0.5g,
Garlic 10g,
Rice wine 0.5g,
Vegetable oil 0.05g,
Sugar 1g
METHOD:
Boil the water to 90, then add the sort rids into the water for 10 minutes;
Drain out water and wash ribs with cold water;
Put .05grams of oil into a deep frying pan;
Add chopped onions, crushed ginger and garlic, sliced chilly, etc;
Stir fry until the ingredients are
half-cooked, nutritionally;
Add sort rids into the ingredients;
Mix it well and cook for 10minutes;
Add rice wine and cook for two more minutes, then add appropriate amount of water depending on the quantity of the mixture in the pan;
Cook on high temperature;
Boil for 90 minutes until the soup level is same as the amount of mixture in the pan;
Finally, add some salt and sugar, and sprinkle some coriander and green onion for decoration.
