During this Chinese New Year celebration there is a lot to be done in terms of food and beverages consumption.

The Westin Denarau Island Resort and Spa Zing Restaurant boasts newly recruited Chinese chef Jinpeng Jia (Bobo) who is a great addition to the team.

He brings authentic and traditional offerings in Chinese food.

Zing Restaurant offered a special Chinese inspired buffet prepared by Jinpeng Jia (Bobo) on January 27.

Chef Bobo is sharing his special recipe of spicy salt and pepper lobster.

Food and Beverages director Scott Freund and executive chef Prabhat Prawin are inviting local and the Chinese communities to come and try their buffet during Chinese New Year.

Spicy salt and pepper lobster

INGREDIENTS:

(Quantity (1 port)

Whole lobster 1 Pc,

Crispy shallots 20gms,

Fresh chili 10gms,

Chopped garlic 15gms,

Spring onion 25gms,

Chinese five spice 5gms,

White pepper corn powder 8gms,

Salt 10gms,

Chinese cooking wine 15ml,

Ginger 10gms.

 

For paste:

Corn starch 200gms,

Egg 3pcs,

Vegetable oil 15ml,

Salt 8gms.

 

METHOD:

 

Cut the lobster from back side like butterfly and take out the meat cut to small dice then marinate with 5ml cooking wine, 3gms white pepper corn and ginger.

Put corn starch in mixing bowl add salt, eggs then slowly mix it then add oil until the mix getting smooth.

Mix the lobster with paste. And heat vegetable oil 2000 mls to 180 degrees then put lobster one by one in hot oil, fry it to gold colour. And fry the lobster shell to red colour for garnish.

Add Capsicum and onion and stir till cooked.

Heat the wok add little oil, put garlic, chili, lobster and cooking wine stir fry then put salt, pepper, five spice, shallots and spring onion mix all the seasoning. Then put it in lobster shell garnish with spring onion
