Local Produce Goes Well With Italian Recipes: Reinhardt

Radisson Blu Fiji Resort’s Masima Restaurant has reopened with an Italian flavour in the form of new executive chef Andreas Reinhardt.
Mr Reinhardt said the Fijian climate and local produce was the inspiration behind the creation of this new lineup of dishes at the Masima eatery.
“The array of local produce goes very well in Italian recipes, which is a light cuisine with lots of flavours,” said Mr Reinhardt while preparing one of his signature dishes for this edition.
Mr Reinhardt loves to hand pick ingredients from the local market that are unique to Fiji like fresh caught local seafood, vegetables from Sigatoka Valley, Coral Coast sea grapes and local Yaqara beef.
These elements are then fused with imported cheeses, cured meats and hand rolled pasta to the popular southern Italian cuisine at Masima.
The mixture suits Fiji’s climate perfectly with the fresh, light and simple approach to food.
Resort general manager Gerard Knight said the inclusion of Mr Reinhardt brought another dimension to the culinary attributes to the property.
