With the creativity of their chefs and their passion to delight customers, Indigo Indian and Asian Restaurant has won many hearts since it opened in 2007.

The eatery is owned by Jack’s of Fiji and is located at Port Denarau, where it provides an exotic menu with an artful blend of Indian and Southeast Asian cuisines.

Recently, Apco Coatings general manager Joseph Pulikottil officiated at the restaurant’s 10th anniversary on August 25.

“In my three years in Fiji I have been coming here all the time,” he said.

Mr Pulikottil said two things he loves about Indigo is its bula service and the fact that they serve his favourite dish – bhindi masala, butter chicken.

Another person who had nothing but praise for the restaurant is tourist Rob Lamers and his family from Brisbane, Australia, who were also at the anniversary celebration.

“Food and atmosphere at Indigo was great. All three of us enjoyed our curries. Friendly staff supported by a good selection of wines,” said Mr Lamers.

Jack’s Restaurant Limited operations manager, Vishal Sami, said: “It has been a great 10 years journey and the greatest achievement is the staff.

“Without their support we won’t be able to reach where we are currently at.

“Indigo has been rated as one of the best restaurants basically on Denarau Island.”

Currently they have 35 staff in the kitchen and the front line, with two chefs specialising in Tandoor and Indian foods from India.

“Every six months we change our menus and this gives a different feel to the diner and we try new things,” Mr Sami said.
