The Moffat National Salon Culinaire will encourage growth for the culinary industry through education and competition.

This was said by the Pacific Rim Continental Director Murray M. Dick who is also the chief judge throughout the four-day event at the Fiji National University at Namaka in Nadi.

“Competitions are a great levelling field for contestants to become established which is for their career, they can learn off one another as well personal growth and development,” he said.

“The world is a small place, the only way we can gain the expertise and knowledge is to participate in competitions.

“With support to compete in overseas tournament chefs can see what everyone else has been doing and to work at a different level.”

Having being the judge at the competitions for the third time in the four years, he said seeing the support of head chefs from around the country is admirable which has led to the progress of the competitors and benefitted the tourist sector as well.

“The support from all the head chefs in the country is great for the industry, it shows the respect the industry that they belong too, it’s all for love,” he added.

“Each time we see different techniques from the competitors and it’s admirable that they do get involved and show there interest in the industry they are in and is also great for the tourism industry.

“Food is the major component for the satisfaction of all tourists so it is important to nurture, grow; and celebrate the indigenous culture and food with in the country is essential,” said Mr Dick.
