Sarah Todd featured on MasterChef Australia, is eager to take what she learned here back to her own restaurant in India

 

The work of Fijian communities around sustainable farming is expected to be taken to India by an Australian chef and restaurant owner, Sarah Todd.

Ms Todd was in Fiji this month working with local communities in the Western Division.

According to the Australian High Commission, Ms Todd, who featured on the television show MasterChef Australia, now lives in India and was working in Fiji with communities that are benefiting from the Australian Government’s Australian Centre for International Agricultural Research (ACIAR) agricultural projects.

The Commission states that ACIAR’s work in Fijian communities aims to increase food security within the country.

This would help establish sustainable farming methods for Fijians and ensure agricultural benefits remain viable, among other things.

Ms Todd, on her social media pages showed how impressed she was with the depth of flavours and skills involved in Fijian recipes of papaya lote, rourou (dalo leaves), root crop chips and the traditional lovo.

She has been working within these project communities to improve the health benefits of the foods they grow and cook.

She was eager to take what she learned back to her own restaurant in India and spread the word about the sustainable farming methods practised by Fijian communities.

Ms Todd stated that she visited farmers in Fiji working with the Australian Centre for International Agricultural Research and the University of Sunshine Coast to rebuild domestic fruit industries, increasing rural employment opportunities and improving local food security.

“I’m visiting an Australian aid project in Fiji working on a special new project,” she had said.
