The Sofitel Fiji Resort and Spa has taken the restaurant concept to a new level with the opening of their $3 million Bazaar Kitchen Restaurant.

The resort’s general manager Vincent Macquet said the Bazaar was a brand new concept in Fiji.

“It’s got seven interactive kitchens which means the chefs will be in the middle of the restaurant.”

The Bazaar Kitchen Restaurant will feature French, Arabic, American Grill, Chinese, Japanese, Indian and Fijian cuisines with everything cooked in front of guests.

Mr Macquet said most of the ingredients that would be used are local.

“It’s the biggest restaurant that we’ve got in our resorts.

“We invite everyone, including locals to try this new concept.

“It is a buffet like never seen before in Fiji – hence the word Bazaar Kitchen.”

“We’ve got up to 350 seats in total in the restaurant, so compared to what we had before, everything from the chairs, the cutlery, chairs and equipment is all brand new.

“We didn’t keep any of the old.”

Mr Macquet said this was a big project and was something they had been working on for a long time.

The restaurant had a soft opening on Wednesday and Mr Macquet said this was an exciting time for the resort.

“When you walk into the space, the kitchen itself is in the middle of the restaurant and it’s like a round kitchen.

“So you have the Indian section with two tendrils over it, the Middle Eastern, Japanese, Chinese and the American grills.

“Each station will be manned by a chef with a different colour uniform so as a guest when you walk in, you actually get to talk to the chef who prepares the food and serves it to you in the restaurant.”

“For us it’s a big investment,” Mr Macquet said.
