There is a culinary philosophy behind Fish Bar restaurant at Fiji Marriott Resort Momi Bay.

The philosophy is to use the best fresh local ingredients and seafood with overseas prime produce to create dishes inspired by traditional Fijian cuisine with an international fine dining flare.

The Fish Bar culinary team is made up of local chefs, and runs successfully under the leadership of Moffat gold-medal winner sous chef, Ritesh Kumar.
